Ingredients
- 1 wedge of blue cheese
- 2 crunchy eating apples
- 2 pears
- pecan nuts or walnuts Large handful
- 80g Pumpkin Seeds
- 80g Sesame Seeds
- fresh mixed salad leaves
- 2 handfuls mange tout or sugar snap peas
- Salad dressing
- 1 bunch fresh herbs such as parsley or fennel optional
Cooking Instructions
- Chop the nuts coarsely and add to a dry pan over a medium heat and toast gently for a minute or 2
- Add the pumpkin seeds and then the sesame seeds. Keep shaking the pan. When you can smell the nuts and seeds have begun to brown, turn out into a clean bowl to cool
- Wash and dry the salad leaves – use whichever ones you like
- Cut the apples, pears, mange tout/sugar snap peas into bite sized pieces and add to a large bowl. Add some salad dressing and mix through to stop the fruit discolouring
- Cut the blue cheese into pieces and add to the fruit with the cooled nuts and seeds
- Add the salad leaves and fresh herbs if using and gently mix everything through
- Add more salad dressing if required
