Ingredients
- 300 g New Potatoes quartered
- Rapeseed Oil
- 40 g Chorizo cut into strips
- 1 Red Chilli finely chopped
- Parsley Freshly Chopped
- 100 g Smoked Salmon
- 2 poached eggs
Cooking Instructions
- Boil the potatoes until tender, drain and cool.
- Heat 2 tbsp Rapeseed Oil in a large non-stick frying pan and fry the potatoes, turning over until golden and crisp.
- Add the chorizo and chilli and fry for another 3-4 minutes until the chorizo is crisp
- Serve the potatoes topped with the cold smoked Salmon and poached eggs.
- Season and sprinkle with Parsley.
