Ingredients
- 50 grams Grated Cheese
- 1 Red Pepper
- 1 Yellow Pepper
- 5 Eggs
- 200 grams Potatoes diced
- 2 Tomatoes chopped
- 1 tablespoon Rapeseed Oil
- 1 cup Spinach
Cooking Instructions
- Place 1 tsp of oil in a skillet over medium heat.
- Put the potatoes in a pan of cold salted water and bring to the boil.
- Add diced potato and peppers to the skillet stirring for 8 - 10 minutes.
- In a bowl whisk the eggs, salt, chopped tomatoes and grated cheese.
- Add the egg mixture to the pan cooking until the edges are cooked and put under a hot grill for a few minutes until it’s fully cooked through.
- Top with spinach and serve.
