Ingredients
- 1 kg New Comber potatos
- 3 tbsp Mayonnaise
- Red Wine vinegar
- 2 tbsp Salad dressing
- sea salt
- Freshly ground pepper
- bunch Scallions
- Bunch parsley and mint chopped
Cooking Instructions
- Wash the potatoes and boil or steam for about 15 minutes - until tender.
- Cut the potatoes in halves or quarters whilst hot, place in a bowl and sprinkle with red wine vinegar. Season with salt and pepper.
- Mix 2 tbsps of your preferred salad dressing through the mayonnaise to combine.
- Cover the cooled potatoes with the mixture and add finely chopped spring onions and the chopped parsley and mint.
