This new potato salad recipe from Jilly Dougan uses Comber Early Potatoes. Comber Early Potatoes have a Protected Geographic Indication (PGI) under European law. This means that because of the soil and the climate they are unique to the area around Comber in Northern Ireland, and really special.

Cooking Instructions

  1. Wash the potatoes and boil or steam for about 15 minutes - until tender.
  2. Cut the potatoes in halves or quarters whilst hot, place in a bowl and sprinkle with red wine vinegar. Season with salt and pepper.
  3. Mix 2 tbsps of your preferred salad dressing through the mayonnaise to combine.
  4. Cover the cooled potatoes with the mixture and add finely chopped spring onions and the chopped parsley and mint.
