- For a quick and easy weeknight meal, whip together this easy marinade in the morning or even the night before, then all you have to do is fry up the chops at dinnertime. Whisk together the soy sauce, lemon juice, ginger and garlic in a bowl. Place the pork chops in a baking dish and pour the marinade over them, turning them to make sure that they are coated well. Cover tightly with cling film and marinate in the fridge for at least 2 hours, turning them at least once.
- Remove the chops from the marinade and pat dry with a piece of kitchen paper. Melt the butter in a large skillet. When it's foaming, add the chops and cook for 5 to 7 minutes per side to ensure that they are completely cooked through. Cook the chops in batches, if necessary, so that you don't crowd the pan. Serve immediately.
- To barbecue: BBQ the chops for 3 minutes on either side.
- For a lower-fat option, cook the pork chops on a baking tray in the oven for about 20 minutes at 200oC/gas mark 6, rather than pan-frying them.
