This tomato salad can be served with good crusty bread to mop up the juices or as a side dish with roast chicken, fish or a green salad.

Cooking Instructions

  1. Thinly slice the tomatoes and the onion and lay out on a large flat plate or bowl in layers, adding a sprinkle of salt and pepper between layers.
  2. Mix the crushed garlic, oil, lemon juice and finely chopped herbs in a bowl and drizzle over the whole plate.
  3. Allow to sit for half an hour so that the tomato releases its juices and the flavours combine. This dish gets better the next day as the flavours fuse!
  4. Serve with good crusty bread to mop up the juices or as a side dish with roast chicken, fish or a green salad.
