Ingredients
- 5 Large ripe tomatoes cherry tomatoes work too just use more
- 1 Clove garlic
- 1/2 Small red onion
- 2 tbsp Broighter Gold rapeseed oil or olive oil
- 1/2 Juice of half a lemon
- Salt and freshly ground black pepper
- fresh herbs such as parsley or fennel basil, mint or chives work too
Cooking Instructions
- Thinly slice the tomatoes and the onion and lay out on a large flat plate or bowl in layers, adding a sprinkle of salt and pepper between layers.
- Mix the crushed garlic, oil, lemon juice and finely chopped herbs in a bowl and drizzle over the whole plate.
- Allow to sit for half an hour so that the tomato releases its juices and the flavours combine. This dish gets better the next day as the flavours fuse!
- Serve with good crusty bread to mop up the juices or as a side dish with roast chicken, fish or a green salad.
