Ingredients
- 1 Red Pepper
- 1 Green Pepper
- 1 Red Onion
- 125g Mature Cheddar Cheese
- 1/2 tsp Cumin
- 1/2 tsp Coriander
- 1/2 tsp Smoked Paprika
- 4 Tortilla warps
- 2 tbsp Light olive oil
Cooking Instructions
- Slice the peppers and onion.
- Heat the oil over a medium heat and add the sliced vegetables, cooking for 5-6 minutes.
- Add the spices and cook for a further 2 minutes.
- Divide the cooked vegetables between two wraps and top each with half the cheese.
- Place the remaining wraps on top of the filled tortillas.
- Place in a dry frying pan, and cook for 3-4 minutes over a low cook either side.
- Serve cut into wedges with guacamole and salad, and plenty of hot sauce.
